It is winter. It is cold…and we need all the comforting snackables! This giant choc chip cookie can be shared or uhm….eaten all by yourself. It is glutenfree, refined sugar free and dairy free if you sub butter for coconut oil. The DeVilliers Nut butter bars cater for my dietary needs, hence I always use it. You can use any chocolate you like.
Ingredients:
1 egg yolk
½ cup GF oat flour (substitute for any)
1/8 tsp baking powder
3tbs honeys
8 blocks of DeVilliers chocolate chunks
3 tbs butter/ coconut oil
1tbs coconut sugar
1 pinch salt
½ tsp vanilla extract
Method:
-Melt butter (half liquid and half soft)
-Mix in honey, coconut sugar, egg yolk and vanilla extract
-Measure your flour and level it with a knife
-Add in baking powder and salt. Mix.
-Stir in 90% of the chocolate chunks.
-Roll into a dough ball and place on prepared baking sheet.
-Press it about 8cm thick
-Place the rest of chocolate chunks on top
-Bake for 10-13 minutes. Don’t overbake!
Let it cool for 10-12 minutes and enjoy!
